Tea Meets Dessert: A Tropical Crumble with @slikhjem

Some recipes feel like a little escape – a spoonful that takes you somewhere brighter, warmer, and more joyful. That’s exactly what happened when we teamed up with the wonderful @slikhjem, who created this dreamy Tea Crumble with Mousse using our KOCO Green Island Mango tea.

If you’ve ever wondered how tea can move beyond the cup, this recipe is proof: a crumble with a delicate tea twist, a light mousse kissed by mango notes, and a tropical topping of fresh fruit. It’s sunshine in a glass – layered, playful, and a little bit unexpected.

Why Green Island Mango?

This tea is one of our favorites for summer. It’s fruity without being too sweet, and it carries a soft mango aroma that pairs beautifully with creamy desserts and fresh fruit. By folding it into both the crumble and the mousse, the tea becomes the star of the dish – not just an accent, but a true flavor base.

The Recipe

Serves 2

Tea Crumble

  • 2 tbsp brewed Green Island Mango tea leaves
  • 2 tbsp flour
  • 1½ tbsp sugar
  • 20 g butter
  • Pinch of salt
  • (Optional: a handful of crushed pistachios for extra crunch 🌿)

How to:

  1. Preheat oven to 170°C.
  2. Mix tea leaves, flour, sugar, butter, and salt until crumbly.
  3. Spread on a baking tray and bake for about 10 minutes until golden and crisp.

Tea Mousse

  • 100 ml cream
  • 1–2 tbsp cooled brewed Green Island Mango tea

How to:

  1. Whip the cream until soft peaks form.
  2. Gently fold in the cooled tea – it gives the mousse a fragrant, fruity lift.To Assemble
  3. Layer in a glass or small bowl:
  4. A spoonful of crumble.
  5. A cloud of mousse.
  6. Repeat the layers until the glass is nearly full.
  7. Finish with more crumble, then top generously with fresh mango & passion fruit.
